“Breakfast with Talitha” in Pure Child Magazine: pumpkin waffles
Warming waffles with (naturally) sweet pumpkin, lightly sweetened with coconut sugar. Coconut sugar contains vitamins and minerals and is considered an unrefined sugar, which also has less impact on your blood sugar level.
I was asked to share healthy breakfast recipes in Pure Child magazine! The magazine even has a new section: “Breakfast with Talitha“! How cool is that? In this section I will share kids-proof family breakfast recipes.
Since I prefer to work with seasonal products, I came up with a pumpkin waffle recipe. You will find it in the autumn edition (November/December 2023) of Pure Child (available in Dutch only). In addition to a subscription, you can order separate editions of Pure Child.
These waffles are very easy to make with just a handful of ingredients, including oat flour, pumpkin and coconut sugar.
Oat flour is considered a healthier alternative to classic ‘white’ wheat flour. Use gluten-free oat flour if your child(ren) must eat gluten-free.
The waffles are naturally sweet due to the addition of a sweet vegetable (pumpkin). Coconut sugar undergoes little processing, which means it retains vitamins and minerals. It is considered an unrefined sugar, which also has less impact on your blood sugar level.
In short, a responsible breakfast waffle or snack for children that allows you to vary (e.g. add gingerbread spices, cinnamon or vanilla).
